The bush fire crisis sadly affected large swathes of Eastern Australia in January 2020. With Australia's supply of honey greatly reduced, this puts great pressure on the supply from Western Australia.

Purpose
Raw honey is a good source of natural sweetness. Jarrah honey is known as the healing honey. It has a low glycemic index, is high in minerals and has a high level of fructose.
Most of all, it’s highly anti-microbial. In fact, the Western Australian Department of Agriculture “believe(s) the activity in Jarrah honey to be about 50% higher than Manuka, the world famous New Zealand honey recognised for its healing properties.”* Jarrah honey can even be used to treat wounds, burns and skin infections.
Most honeys available in shops today are heat-processed and filtered to improve their appearance and ease of handling. Processing honey removes and destroys much of the health-promoting qualities of the honey. For the same reason, it is not advisable to mix with very hot water or cook with it.
Jarrah Honey is from a family-run operation in Western Australia. The honey is collected from virgin forests using traditional methods. It is not filtered or heat-treated. It therefore retains its natural phytonutrients, enzymes, antioxidants, propolis, pollen, vitamins and minerals for your good health.

Directions
Take it neat or make a honey drink with one teaspoon in warm water. We like to add a squeeze of lime and a pinch of black salt for a really rejuvenating beverage.
For best results, store in a glass container once opened.
Crystallisation may occur in raw honey. To liquify, place container in warm water gently without lid.
